Spiced Olives

I was thinking about eating olives the other day... 
But not any simple kind ... I felt like a little twist.
And when I knew we would have a surprise visit at home home, I decided to make a snack and satisfy my desire at the same time. 
Why not, right ?

200 gr Green Olives
200 gr Black Olives
1 cup olive oil
4 cloves garlic, thinly sliced
1 tablespoon oregano
1/2 tablespoon crushed red chilli pepper
1/4 tablespoon ground black pepper 
1 bay leaf

Drain the olives and reserve.
Heat the oil over medium heatAdd garlic and brown lightly.
Turn off the heat and add remaining ingredients, finally, the olives.
Serve at room temperature.

MATILDE'S TIP:  It gets better with the time, so, if you make it the day before ... delicious!
You can store in the refrigerator, and serve smaller portionsdepending on the number of guests.
I get very light on pepper, but if you like ... add some more.

And if you do not want to eat the olives anymore, give it a new face. Pulse everything in a food processor and make a delicious paste.
