Brazilian Panquecas

In Brazil, there are several options of dishes that you can make with ground beef and a hamburger is probably the last one of our list.

This recipe has an italian flavor, and probably can be found in another places around the world, but 
it is really popular in my country.

2 tablespoons of butter
1 onion, finely chopped
2 cloves garlic, crushed
500 g of minced meat
1 cup of tomato sauce
chopped parsley
salt and pepper

In a saucepan over medium heat, melt the butter and fry the onion and garlic until golden brown. Add the ground beef and fry well. Incorporate the tomato sauce, the chopped parsley, salt and pepper to taste and cook it to dry the sauce a little bit.

1 egg
1 tblspoon oil
1 cup milk
1 cup flour
1 pinch of salt
1/2 teaspoon baking powder

Place all liquid ingredients in blender and blend for a few minutes. Gradually add the flour, then the salt and baking powder.

The dough shouldn't be too thick.

Grease a small skillet with a paper towel. If you have a nonstick skillet better.

Using a ladle, pour the batter in the middle of the pan and go spinning, spreading the dough uniformly across the bottom of the skillet, like a crepe.

You will notice that the edges will come off. When the whole dough come off the pan, it's time to turn it.

Wait until everything is cold and start to fill the disks with about 3 tblspoond of meat.
Roll it and set on a serving dish.

MATILDE'S TRICKSEven with nonstick skillet, I always use a little oil before making the first, just in case.

Be careful to do not make them too thick. The thinner, the better.

The meat shouldn't be too juicy. If you have too much sauce, it will soak the dough and it will break before serving.

You can make the pancakes in advance and store them in the refrigerator. You can reheat them in the microwave, throw the hot tomato sauce and the parmesan cheese on top and serve immediately.

This dough can also be served as a desert ...  
Just add 1 tablespoon of sugar to the dough and make the filling with jellies, fudge, chocolate, nutella, honey. Be creative!
