Gougères: French Cheese Puffs


Watching the French Chef Emmanuel Bassoleil on the brazilian tv show today, I could not resist this recipe.

And you know what was the result ???
Imagine a savory profiteroles, warm, melting in your mouth ...
EATING DOWN ON MY KNEES !!!




250ml water
100g butter
1 pinch of salt
150g of wheat flour
4 eggs
100g grated gruyere cheese 
(or 50g gruyere and 50g of parmesan)
1 egg yolk beat 

Preheat oven to 180 ° C/350 ° F.

Grease your trays with butter and flour.

In a saucepan with a thick bottom, place 250 ml of water, 100 g of butter and 1 pinch of salt and cook over medium heat until boiling.
Remove pan from heat and add 150 g of flour, mix well and return the pan to the fire again, stirring constantly, until dry and unglue the edge of the pan.
Turn off the heat and transfer the dough to a stand mixer. Start beating lightly and add 4 eggs, one at a time, stirring constantly. Add the grated cheese and mix.

With a tablespoon, take portions of dough and place on the baking sheet. Brush the egg yolk and bake for 20 to 30 minutes. Remove from oven and serve immediately.





MATILDE' TIPHe used sea salt and rosemary sprigs. I didn't have at home, so I used Herbs de Provence and Pink Salt. Sooo Good!
