Shrimp in Coconut Milk

The other day I had a craving for shrimp ...
But a recipe with a taste of Brazil, you know?
And as I always have them frozen, my life is much easier when these desires appear.

500 gr of medium shrimp (shelled)
2 tablespoons butter
1 cup onion, diced
2 cloves garlic, minced
1 teaspoon saffron (optional)
500 ml of coconut milk
1 teaspoon pepper sauce (optional)
Salt and pepper to taste
2 tablespoons chopped coriander 

In a deep skillet, heat the butter.
Add onion, garlic, salt and pepper and stir until the onion is translucent and garlic lightly browned.
Add the coconut milk, saffron and pepper sauce. Stir and bring to a boil.
Lower the heat. Adjust the salt.
Add the shrimp and cook for another 10 minutes.
Add the chopped cilantro and serve.


If you do not have saffron, may substitute it for paprika to give some color.

Serve with white rice or a vegetable rice.
