This is my version of the famous "hash browns" served at the best places for breakfast or brunch here in the U.S..
Very simple to prepare, they are a quick and easy alternative for a side dish.
3 medium potatoes
50 g butter
2 tablespoons olive oil
1 bay leaf
salt and pepper to taste
Peel the potatoes and cut into small cubes.
Wash, dry and set aside.
In a large skillet, heat the butter with a little olive oil.
Add the bay leaf, potatoes, salt and pepper.
Over medium heat, pass the potatoes in butter mixture and seasonings, stirring constantly, until they are golden to your taste.
