Party Salad




We decided to spend New Year alone at home
after the trip to Miami for Christmas.
But even so, it wouldn't go unnoticed !

I made a neat little dinner for two and this salad came from a "awkward moment".

Why?

Because when you send your husband to Grocery Shopping Alone and you put SALAD on the list, he will grab the first bag of leaves he finds.
To my surprise, the leaves had to be cooked before serving. And in the package came mustard, turnip, kale and spinach leaves.
And now, what am I going to do ???



A few ideas came into my mind and I was cooking, I was mixing, decorating and in the end, the result was wonderful!
A pleasant surprise.




250g Green Leaves (Southern Greens)
1 clove of garlic, grated
olive oil
salt and pepper to taste
1/4 cup dried cranberry (or raisins)
1/4 cup Toasted sliced almonds
1 cup of grape tomato halved


In a large skillet, pour a little olive oil, add the garlic and season with a little salt and pepper.
In Medium Heat, lightly brown the garlic and add the leaves. Mix well, until the leaves wilt a bit.
Turn off the heat and sprinkle the remaining ingreditentes above the leaves.
Smother with the lid and let it cool down a little bit.
Serve warm.


If you want to braise your tomatoes, add them along with the leaves. Do not cook too long!
I prefer mine "al natural", I just steamed them a little bit.
And smothering the salad, you prevent it to lose its water in vapor form. This way, it'll have a broth at the bottom, will not get dry and you won't need to drizzle more oil on it.




I liked it so much that I made it again ...
