Almond Waffle

I LOVE waffle!!!
Always did ...
But I must confess that since I got here, I didn't find a brand better than the Belgiam Waffle (the blue box). For me, it is the best, an addiction that I don't trade anyway ...
Until the other day, I found myself without it and as I couldn't find in the market near my house, I decided to take a chance and do my own mix at home.
BUT I decided to spice it up a little bit and do something different and "goxtoso" (with Carioca accent). ;)
The result was WONDERFUL!

2 1/4 cups whole wheat flour
3 tablespoons sugar 
2 teaspoons yeast tea
1/4 teaspoon salt
1 3/4 cups whole milk
2 eggs, separated
1 teaspoon almond extract
6 tablespoons melted butter, room temperature 

Sliced Almonds 
Extra butter
Cinnamon (optional)

In a large bowl, mix the dry ingredients (flour, sugar, baking powder, salt).

In a second bowl, mix the liquid ingredients (milk, egg yolks, almond essence and butter.

In a third Bowl, whisk the egg whites.

Add the liquid mixture to the flour mixture gradually, mixing lightly.
Add the egg whites gently to incorporate all ingredients.

Preheat the waffle maker and pour the amount of mix your machine handles.
Work accordingly.

Before serving, spread a little butter, sprinkle the almonds and the cinnamon on top and drizzle with honey.


My recipe yielded 5 big round waffles.
Make the whole recipe and if you don't eat it all, store them in plastic bags, take the air out and freeze. You'll have waffles ready to eat at any time.
You can reheat with the waffle machine itself or a toaster.
